Paneer Butter Masala






Yesterday being Sunday, i decided to make something a little more elaborate for lunch, than i normally do. I settled on Paneer Butter Masala, PBM, as we call it at home.I had fortunately bought some fresh paneer the day before, from this little dairy shop down the road, which stocks some wonderful cream, mawa, paneer, shrikhand etc, etc. & also, though PBM sounds & looks like a complicated dish,it is not actually so. & I have this really simple recipe which is quick & completely awesome.

So here it goes...




Ingredients


250 gms - paneer, diced
4 Tbsp - oil

3 - onions
1/4 tsp ginger paste
1/4 tsp garlic paste

7-8 Tbsp - tomato puree (readily available in the shops)

1/2 tsp haldi

1 tsp - chilli powder

1 tsp - garam masala

salt to taste
4 Tbsp cream
1 1/2 Tbsp - salted butter

2 Tbsp - kasuri methi
1/4 - 1/2 tsp sugar


Method

1. Chop the onions & grind to paste.
2. Heat the oil, add the onion paste & fry for a couple of minutes. Add ginger & garlic paste & continue frying until the paste starts turning brown.
3. Add the haldi, chilli powder & garam masala & stir for a minute.

4. Add the tomato puree & sugar & continue stirring for 2-3 minutes. Add 1 1/2 cups of water & allow it to cook medium flame for 6-7 minutes.

5. Add the kasuri methi, cream, & salt & cook for a few minutes.

6. Add the diced paneer & butter & cook for another few minutes, until the gravy starts bubbling.
7. Take off the stove & serve hot with roti or rice.
