I started this blog to actually put down some tamil recipes with our family twist on them. But with requests from a couple of people for quick & tasty stuff to make, I find myself getting carried away in that direction !!
I have now begun to recall all those quick stuff that i used to churn out all the time when my kids were in school & I was rushing around behind them all day long. They of course wanted something different & exciting everyday. & i remember racking my brains to come up with something interesting with whatever was on hand.......
I am putting down this recipe for paneer-cheese balls, that everyone in the family used to love.....
Ingredients
fresh paneer -250 gms, finely grated
cheese cubes - 6 (about 150 gms), finely grated
corn flour -5 tsp
green chillies - 4-5 finely chopped
fresh coriander - 2 -3 Tbsp
salt to taste
oil for frying
Method
1.In a bowl add the paneer, cheese, green chillies, coriander, corn flour & salt.
2. Mix well to make a dough.
3. Taste for seasoning.
4. Make lemon sized balls & keep covered until it needs to be served.
(You could insert a small piece of mozzarella cheese inside each ball , only, it has to be well covered by the paneer mix.)
5. Just before serving, heat the oil, & fry on medium flame until crisp & golden in colour.
6.Remove from oil &serve immediately with tomato sauce or fresh coriander-mint chutney.
P.S - If you don't want to take the trouble of deep frying them, you could flatten the paneer balls & simply shallow fry them on the tawa in a tsp of oil........frying each side until golden & crisp.

Tastes wonderful, crisp on the outside & superbly melting in the mouth, inside !!!!
