Vegetable Pulao with Raita









A quick meal for my neice in Austin !!!
I am writing down a really simple recipe for Vegetable Rice / Pulao , whatever u want to call it....




Vegetable Pulao

Ingredients..........


1 cup diced veggies ( carrots, beans, cauliflower, potatoes, peas etc)
( you can use a mix of whichever veggies u have or use just peas)
1 cup rice ( washed & soaked for about 15 -30 mins )
2 -3 tbsp ( that's table spoon) oil or ghee
2 -3 cardamoms ( does not matter if u don't have them)
1/2 inch cinnamon stick ( if u have it)
1 medium onion sliced
2 tbsp - chopped dhania( if u have)
salt to taste
2 cups boiling water


Method:-


1. Put the 2 cups water to boil on one stove.
2. Now , put the cooker on the other stove, add the ghee & after a minute , add the cinnamon &
cardamom..
3. Stir for a min , then add the veggies, stir for a couple of mins.
4. Now add the washed , soaked & drained rice, stir for a min or two.
5. Add the salt & the water which will now be boiling.
6. Give it a stir & close the lid.
7. Allow pressure to form.
8. Switch off after three whistles.
9. Wait for pressure to release, before u open the lid.



If u like, u can fry the onions in a bit of ghee until golden & use it to garnish the rice just before
serving.


Top with chopped dhania & serve hot with cold raita !!

Raita


Ingredients:-

1 cup curds
salt to taste ( or black salt )
a pinch - roasted jeera powder (optional)
a pinch - chilli powder ( optional)
chopped cucumber, grated carrot, finely chopped onion, chopped tomato, chopped dhania--all
optional ( whichever salad veggies u have or want... OR ..... just seasoning will also do )



Method :-

1. Beat the curds lightly with a fork.
2. Add veggies as required.
3. Add salt. Mix.
4. Sprinkle a pinch of chilli powder.
5. Top with chopped dhania.


P.S .......Instead of ordinary salt, u can use some kala namak & bhuna jeera powder.
