Alu Masala




Here's the recipe for the Masala part of the Poori- Masala ...
The same curry goes into the Masala Dosa too.


Ingredients

potatoes - 3-4 medium sized, boiled & roughly chopped & mashed
onions - 4-5 , sliced
green chillies - 5-6, finely chopped
turmeric powder - 1/4 tsp
salt to taste
oil - 2 Tbsp
mustard seeds - 1/2 tsp
urad dal ( split black gram) - 1/2 tsp
chana dal (split bengal gram) -1/2 tsp
fresh curry leaves - a few

Method


1. Heat oil in a kadhai.
2. Add mustard seeds, let it splutter then add the dals & curry leaves & fry for a minute.
3. Add the green chillies & onions for a few minutes until onions become transparent. Do not let it brown.
4. Add the potatoes, salt & turmeric. Add 1/2 a cup of water & cook covered on medium flame for 4- 5 minutes. You can cook until the water is all absorbed & the curry is dry, or keep it just a bit moist ,as i do.

Goes wonderfully well with puris, parathas etc,etc......
