Yesterday evening was one of those trying ones.
I was happily relaxing in front of the T.V watching my favourite soap, Balika Badhu.....
No cooking dinner. We would go out , i had decided.
The mobile rings ....& my husband from the other end says , he is bringing his boss home for dinner !!!
Can u imagine my haalat. After a bit of cursing & cussing , i got up start making a dinner worth serving the boss.
The dinner got done quickly.... idlis & dosas with sambhar & chutney, ( which by the way is a all time favorite with friends in Baroda ), but what really came out well , was the dessert. I did not make it from scratch as there was no time. But got a few things from the market & put them together.

Ingredients
small sponge cake or tray cake as it is called in some bakeries -1
( I bought a square one.)
whipping cream - 250gms
powdered sugar - 4 Tbsp
tinned cherries - 1 small tin, split into halves & seeds removed
dark or milk chocolate - 1 big bar, grated
vanilla essence - 1 tsp
Method
1. If the sponge is square , cut it into half. We will place one piece over the other later.
2. Whip the chilled cream with 3-4 tbsp of powdered sugar & 1tsp of vanilla essence with a electric beater just until it holds its shape. You can also use a manual whisk, it just takes a few minutes more. Do not over whip. It will turn into butter. Keep aside.
3. Place one half of the cake on a plate. Moisten it very well with the syrup from the cherry tin. That is , sprinkle the syrup on the layer, pat it dowm , then sprinkle again. Do this a couple of times until the layer seems well moistened. Do the same to the other layer of cake too, on another plate.
4. Take a spatula or butter knife & spread a thick layer of the whipped cream on one layer of the cake.Top the cream with a good layer of the cherries. Sprinkle grated chocolate over it.
5. Place the second layer of moistened cake on top of the 1st one, gently.Spread the a generous layer of cream on the top of the cake. Smoothen it. Then spread the rest of the cream on the sides neatly.
6. Arrange cherries on the top as you like. sprinkle the rest of the portions with grated chocolate. Cover the sides also with grated chocolate if possible. 7. Place in the refrigerator until use.
P.S
1. If you want you can use the canned whipped cream that is readily available in the markets instead of the fresh cream.
2. Using the same method & pineapple instead of cherries, you can make fresh cream pineapple pastry too. Just leave the grated chocolate out.
