Corn & Coriander Bake








This baked dish tastes best when the corn kernels are sweet & nice. I like a lot of chopped coriander & chilli flakes in this dish. This makes the dish a little more spicier & flavourful than a normal continental dish.

Ingredients



For the Base Bread Layer
bread - 4 slices
butter - 2 tbsp

salt - about 1/4 tsp

chilli flakes - 1/4 - 1/2 tsp

grated cheese - 2 tbsp

For the Sauce

tinned corn or corn nibblets - 1 cup
milk - 2 1/2 cups
butter, softened - 2 tbsp

flour (maida ) - 2 tbsp
salt to taste - about 1/2 tsp

pepper - 1/4 tsp

grated cheese - 2 tbsp
chopped coriander - 3-4 tbsp

For the Topping

grated cheese - 2 tbsp
melted butter - 2tbsp


Method


1.
For the base layer, break the bread into pieces. Grind in a mixer to get fresh bread crumbs.

Melt 2 tbsp of butter in a pan.Add the fresh crumbs, salt & chilli flakes. Saute for 5 minutes. ( I like them just a bit crunchy ).

Spread the sauteed crumbs in a greased ovenproof dish. Sprinkle 2 tbsp cheese over it & keep aside.

For the sauce, heat the butter. Add the flour. Cook on low heat for 1 minute.

Add the milk, stirring continuously. Add the salt & pepper & stir until it comes to a boil.

The sauce will become thick & custard like. Now add the cheese & mix well.

. Mix in the corn & coriander & remove from fire.

. Pour the mixture over the bread crumbs in the dish.

Sprinkle the cheese & pour some melted butter on it.

Bake in a preheated oven at 180 degrees C for about 25 - 30 minutes or until the top is golden brown.

Serve immediately .
