This baked dish tastes best when the corn kernels are sweet & nice. I like a lot of chopped coriander & chilli flakes in this dish. This makes the dish a little more spicier & flavourful than a normal continental dish. Do check it out.

Method
1. For the base layer, break the bread into pieces. Grind in a mixer to get fresh bread crumbs.
2. Melt 2 tbsp of butter in a pan.Add the fresh crumbs, salt & chilli flakes. Saute for 5 minutes. ( I like them just a bit crunchy ).
3. Spread the sauteed crumbs in a greased ovenproof dish. Sprinkle 2 tbsp cheese over it & keep aside.
4. For the sauce, heat the butter. Add the flour. Cook on low heat for 1 minute.
5. Add the milk, stirring continuously. Add the salt & pepper & stir until it comes to a boil.
6.The sauce will become thick & custard like. Now add the cheese & mix well.
7. Mix in the corn & coriander & remove from fire.
8. Pour the mixture over the bread crumbs in the dish.
9. Sprinkle the cheese & pour some melted butter on it.
10. Bake in a preheated oven at 180 degrees C for about 25 - 30 minutes or until the top is golden brown.
11. Serve immediately .
12. Tastes heavenly !!!
