Looks wonderful isn't it !!!
The sweet taste of the carrots & peas works wonderfully for this colourful curry........
Ingredients
Carrots - 3 medium sized ones, finely chopped
( the chopped size of the carrots should be comparable to that of the peas, so that they both cook evenly )
peas - 3/4 cup, fresh & shelled or frozen ones, thawed
turmeric - a pinch
chilli powder - 1/4 tsp
coriander powder - 1/4 tsp
salt to taste - 1/4 - 1/2 tsp
oil - 1 tbsp
mustard seeds - 1/4 tsp
chopped coriander - 1tbsp
Method
1. Heat the oil in kadhai ( Indian wok). Add the mustard seeds & allow to splutter.
2. Add the chopped carrots & peas , turmeric & salt . Stir & cook for minute. Sprinkle 2-3 tbsp of water & cook uncovered on medium flame for about 8-10 minutes. Stir every now & then.
3. When the veggies are nearly done, add the chilli & coriander powder. Mix well & cook on high flame for a couple of minutes.
4. The curry is now ready. Top with fresh chopped coriander & serve.
