My daughter wanted to make some cupcakes yesterday. So with a little help & instructions from me she turned out these perfect ones !!!

Ingredients
flour/ maida - 170 gms
sugar (brown 0r white, caster sugar or normal) - 170gms
butter ( softened at room temperature) - 170 gms
eggs - 3 ( at room temperature ) vanilla essence - 2 tsp
warm milk - 1/2 cup
baking powder - 1½ tsp
Other stuff that can be added (optional)
cranberries
blueberries
semi-sweet chocolate chips
walnuts
For Topping
Fresh cream ,whipped to a soft peak
or
you can use a can of whipped cream
You also need muffin trays & paper cups for baking
Method
1. Preheat the oven to 160 degrees.
2. Line the muffin tray with the paper cups & keep aside.
3. Cream the butter & sugar with an electric beater or a manual one until light & fluffy.
4. Beat in the eggs one by one.
5. Add the vanilla essence & beat for another minute.
6. Remove the beater. With a spatula & or a metal spoon, fold in the flour in 3-4 lots. Gently cut & fold , adding a little milk now & then. The batter should be of a dropping consistency for best results.
7. Put a tbsp full of batter in each paper cup. Top with any of these -
cranberries, blueberries, chocolate chips, walnuts etc....
You can use a mix of these too, in any combination of your choice.
8. Bake in a preheated oven for 15 - 20 minutes, until the cakes are done & a toothpick inserted into the center of the cupcake comes out clean.
9. Remove from the oven & cool before storing them.
10. Tastes Yummy !!!
P.S -
1. These cupcakes can be eaten as they are.They are good.
2. You can top them with a dollop of softly whipped fresh cream . They are
deadly.
3. You can also serve them warm, with some hot vanilla custard poured over. They are completely Awesome !! A perfect dessert for a wintry day.
P.S - In the batch we made yesterday, we have topped some with dried cranberries & some with dried blueberries. I soaked the dried fruits in a little warm water for about 15 - 20 minutes before using them. That way they don't become hard on baking.
P.S - We have used brown sugar( granulated) instead of the regular one because my daughter prefers it. It has a different flavor.
