Thengai Saadam ( Coconut Rice )



A simple Rice dish from Tamilnadu.

Ingredients

boiled rice - 2 cups ( grains should be seperate, not sticky )

scraped coconut - 3/4 cup

cashew nuts - a few

mustard seeds - 1/4 tsp

urad dal - 1/2 tsp

red chillies - 2, broken into bits

hing/asafoetida - 1/4 tsp

curry leaves - a few

oil - about 1 tbsp

salt to taste



Method

1. Heat the oil in the kadhai. Add the cashew nuts & fry until golden & keep aside.

Add the mustard seeds & allow to splutter. Then add the red chillies. urad dal & hing & saute until the dal turns red.

3.
Add the coconut, curry leaves & a pinch of salt & fry until the coconut starts turning golden at the edges.

4.
Immediately, add the rice & salt & mix well & stir for a minute or two on low flame.

5.
Top with the fried cashew nuts & serve immediately.
