Roundup: What’s on your kebab platter
This is a favourite recipe of mine. Do try it this Diwali...................
A wonderfully tasty & spicy snack.
A super accompaniment to Kapi (coffee), Chai ( tea ) or drinks !!!
& best of all ... takes 15 minutes to make.
Ingredients
Peanuts - 1 cup
gram flour ( besan ) - 1tbsp
rice flour - 1/2 tbsp ( optional - adds crunchiness)
salt to taste
chilli powder - 1/4 tsp
asafoetida ( hing ) - a pinch
oil for deep frying
Method
1. Wash the peanuts a couple of times. Drain the water.
2. Into the wet peanuts add the gram flour, rice flour, salt, chilli powder & the asafoetida . Mix well . All the flour & spices should stick to the nuts. If the mixture is too dry, add a tsp or so of water. The mixture should neither be dry nor wet. Something in between.
3. Heat enough oil for deep frying the nuts. Drop them into the hot oil by hand, separating the nuts as you drop them in. Fry on medium flame until they turn golden.
4. Drain & remove them from oil & place on paper towel to remove excess oil.
5. Store in a air tight bottle when cool.
