Strawberry Jam




I saw some fresh strawberries in the market yesterday. Red, juicy & wonderfully tart & sweet ...... all at the same time. Just couldn't resist them.

Bought a whole load of them.




Served some with fresh cream for dessert yesterday night. It was yumm !!!




& then before more of the cream & strawberries found it's way to my hips I decided to make some jam with it.

I have made this jam many times before. It's an awfully simple recipe that I found on the Internet. Tastes divine ! The only problem with this recipe is that it needs to be kept in the refrigerator. It tends to get spoilt if it is kept outside for too long. But don't worry on that score. It never ever lasts that long.

Never !!!



Ingredients

fresh strawberries - 750 gms
sugar - 2 cups
citric acid - 1/2 tsp

Method

1. Remove the stalks & wash the strawberries well . (I don't cut the berries unless they are very big or something. I like large chunks of fruit in the jam.)
2. Put the fruits in a heavy or non- stick pan & stir until the fruits start releasing their juices. Allow the fruit to boil for sometime until they look more or less soft & cooked. They start looking transparent & very liquidy at this stage. Don't get stressed out.
3. Mash the fruits slightly & add the sugar & citric acid.
4. Keep stirring until the sugar is completely dissolved.
5. Boil rapidly till the jam sets when tested.
( Testing - take some water in a small bowl & drop some jam into it. It should just settle to the bottom without dissolving )
6. Cool & immediately pour into clean & dry jars.
7. The jam is now ready for your toast.

I like it on top of just about anything ..................
