Watermelon Granita with an Extra Kick !!!


Summer is here again & the temperatures are already soaring really high. 

All you really want to to do is .....just sit in air conditioned comfort & keep sipping some cold stuff all day long. 
But of course, who will do the dirty job of making all the cool stuff  in the Very Hot Kitchen? 
Why me of course. & I get this job merely because no one else volunteers.........
But then....especially with my daughter at home with me for the summer, I am really eager to try all kinds of stuff .
& here's the result of yesterday's enthusiasm.............

The Watermelon Granita...........
Quick & easy to make..& wonderfully refreshing to eat in this hot weather.
My daughter loved it !


Ingredients

Some fresh, ripe red watermelon
sugar to taste
some lemon juice
some vodka (yes....that's for the extra kick )
some mint leaves for garnishing.........
Yep. That's it !!

Method

Cut up the watermelon into large chunks, remove the seeds & the thick skin.
Put them into the mixer or food processor along with some sugar & lemon juice. Beat well for a few minutes until well blended. Add the vodka. Taste the mixture & adjust the sugar & lemon juice. If the fruit is sweet, you will need to add less sugar & vice versa. The lemon juice adds a wonderful freshness & tartness to the granita.& the vodka provides the extra kick..........

Now pour the mixture into a plastic container with a tight lid & keep in the freezer. Allow to freeze for a few hours. When the mixture is nearly frozen remove & blend again in the mixer to break up the ice crystals & put back in the freezer to set. 
If you have the patience to do this entire freezing - blending again I think the result will be awesome ! 
But me... i stopped with one blending.
Half an hour before you need to serve , transfer the granita container from the freezer to a shelf in the refrigerator.
Scoop out & place in a serving bowl. Garnish with fresh mint leaves & serve !!!

P.S -- The vodka is purely optional.........
