Pasta with Mushrooms & Bell Peppers



A simple pasta dish with sauteed onions, bell peppers & mushrooms. Wholesome, quick and a wonderfully satisfying recipe that you can dish up in a jiffy!

Ingredients
Pasta
red, green and yellow bell peppers
onion
garlic
olive oil
salt and other italian seasoning
fresh basil leaves for garnish


Boil the pasta al dente with a little salt, drain & keep aside.. 
Stir fry the garlic for a minute or two in olive oil. Add the onions  and stir for a minute then add the bell peppers and salt & saute for a few minutes until slightly cooked but still crunchy.( It just takes 3-4 minutes.) Keep aside. 
Heat a little bit of olive oil again, add the sliced mushrooms . Season with salt and stir fry for 4-5 minutes or until done.
Now add the boiled pasta, bell peppers and some mixed Italian spices (basil, parsley, oregano, chillies, rosemary, thyme , marjoram etc .....whatever you have or want. I normally add chillies,oregano,rosemary & thyme.)
Mix & toss for a minute.

Serve hot topped with fresh basil leaves & parmesan cheese.
