Cookies & Ice cream Sandwich

 

This is one of those desserts I make on the spur of the moment when we feel like having something sweet. It's awfully simple & completely adaptable to whatever is available at home. That is what I like best about this ice cream sandwich............

Basically, all you need is some cookies & some ice cream. I have used Chocolate Chip Cookies with nuts in them & vanilla ice cream for a contrast in taste & colour. For the topping, I have used some softly whipped fresh cream, Hershey's Chocolate Syrup & some of the cookies crushed. It was awesome !!!

You can use any flavored ice cream with any cookies of your choice. I have previously used strawberry ice cream with shortbread cookies & topped it with fresh whipped cream & fresh strawberry slices; chocolate cookies with chocolate ice cream; 

with vanilla ice cream & chocolate chips & syrup on top ; 

butter cookies with butterscotch ice cream with crushed praline topping; etc........

basically anything you like. You can also use fresh fruits or fruit coulis for topping.......

Just let yourself go. Have fun putting it together.

Method

Sandwich the ice cream with the cookies & keep in the refrigerator for about half an hour. 

When serving, place on a plate & top with with your choice of toppings................
