Roasted mushrooms with garlic, lemon, parsley and olive oil

I have been for long an ardent fan of this antipasti dish named Funghi alla Trapanese ( grilled mushroom starter ) which we order every time we go to the Little Italy Ristorante.  I even know the serial number of the dish in the menu card off hand..A10.........

Its a simple dish  but freshly made & served hot , its wonderful !


Ingredients

garlic cloves 6
salt to taste
lemon juice 2 tbsp
extra virgin olive oil 6 tbsp
fresh button mushrooms 500 gms
fresh parsley 4 tsp, chopped ( i used dried parseley )

The method is awfully simple.....

  • Crush the garlic with a pinch of salt, using pestle & mortar. Squeeze the lemon juice & mix with the garlic & the oil.

  • Wash & thoroughly dry the mushrooms. Make a cross on top of each mushroom & then pour the dressing on top.

  • Bake on the oven at 180 degrees, for about 10 - 15 minutes, until golden. Sprinkle fresh parsley over the top & serve......
  • Serve with warm farmer's bread.
